BBQ Ranch Salad (Leftover BBQ Salad)

Summer is here and this easy salad made with fresh vegetables and leftover protein from BBQ brighten up the day. The BBQ ranch dressing is easy to mix up and this salad is highly customizable for those who want different toppings. Sometimes the best recipe ideas are born from the desire to use leftovers!

Variations

Toppings – It’s super easy to switch up this salad. My favorite toppings are avocado, tomatoes, and corn. However, black beans, cheese, and red onion are great choices.
Dressing – Use your favorite BBQ sauce or make your own. The same goes for the ranch dressing!
Protein – I’ve usually used leftover BBQ, but freshly grilled chicken and shrimp or pulled pork are delicious.

Tips

This dish makes for an easy meal plan idea. Cut and prepare all of the fresh vegetables, then top with leftover BBQ and dressing for a few days of no-fuss lunches.

BBQ Ranch Salad (Leftover BBQ Salad)

An easy and fresh idea for leftover BBQ or grilled meats.

Ingredients

Dressing

  • ⅓ cup ranch dressing store bought or homemade
  • 1-2 tablespoons BBQ sauce store bought or homemade

Salad

  • 6 cups romaine lettuce chopped
  • ½ cup corn drained
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • cilantro chopped (optional)
  • tortilla chips crushed (optional)
  • left over BBQ or protein of choice

Instructions

  • Prepare dressing: In a small bowl or measuring cup, stir together the ranch dressing and BBQ sauce.
  • In a large serving bowl, combine the lettuce, corn, and tomatoes. Drizzle with salad dressing and lightly toss to coat. Serve topped with cilantro, avocado, and tortilla chips if using.
