Variations
Cheese – I like sharp cheddar for this recipe, but other types of cheeses will work too. Try Colby jack for a milder flavor or feta for tang.

Raisins – Raisins would be a good alternative to Craisins.

Cauliflower Broccoli Salad
Fresh crunchy cauliflower and broccoli, bacon, and a sweet tangy dressing.

Ingredients
Salad
- 4 cups raw cauliflower small florets
- 2 cups raw broccoli small florets
- ¼ cup red or white onion finely chopped
- ¾ cup cheddar shredded
- 6 slices bacon cooked and chopped
- ¼ cup pumpkin seeds
- ¼ cup craisins
Dressing
- 1 cup mayonnaise
- ⅓ cup granulated sugar
- ¼ cup white vinegar
Instructions
- Cook bacon slices and set on a paper towel lined plate to cool.
- Cut cauliflower and broccoli into small florets and put into a large mixing bowl. Finely chop the onion and add to the bowl. Add cheddar, pumpkin seeds, and craisins.
- Chop the bacon and add it to the salad bowl.
- Make the dressing by combining the mayonnaise, sugar, and vinegar. Pour over the salad and mix well. Serve immediately.
