Ingredients
Salad
4cupsraw cauliflowersmall florets
2cupsraw broccolismall florets
¼cupred or white onionfinely chopped
¾cupcheddarshredded
6slicesbaconcooked and chopped
¼cuppumpkin seeds
¼cupcraisins
Dressing
1cupmayonnaise
⅓cupgranulated sugar
¼cupwhite vinegar
Instructions
Cook bacon slices and set on a paper towel lined plate to cool.
Cut cauliflower and broccoli into small florets and put into a large mixing bowl. Finely chop the onion and add to the bowl. Add cheddar, pumpkin seeds, and craisins.
Chop the bacon and add it to the salad bowl.
Make the dressing by combining the mayonnaise, sugar, and vinegar. Pour over the salad and mix well. Serve immediately.
Notes
This salad can be made in advance. Prepare all of the salad ingredients in a mixing bowl and add the dressing before serving.
