Cauliflower Broccoli Salad

Ingredients

Salad

  • 4 cups raw cauliflower small florets
  • 2 cups raw broccoli small florets
  • ¼ cup red or white onion finely chopped
  • ¾ cup cheddar shredded
  • 6 slices bacon cooked and chopped
  • ¼ cup pumpkin seeds
  • ¼ cup craisins

Dressing

  • 1 cup mayonnaise
  • cup granulated sugar
  • ¼ cup white vinegar

Instructions

  • Cook bacon slices and set on a paper towel lined plate to cool.
  • Cut cauliflower and broccoli into small florets and put into a large mixing bowl. Finely chop the onion and add to the bowl. Add cheddar, pumpkin seeds, and craisins.
  • Chop the bacon and add it to the salad bowl.
  • Make the dressing by combining the mayonnaise, sugar, and vinegar. Pour over the salad and mix well. Serve immediately.

Notes

This salad can be made in advance. Prepare all of the salad ingredients in a mixing bowl and add the dressing before serving.
