Substitutions
Nut butter – Use your favorite nut butter or a mix of them.
Maple syrup – Replace the maple syrup with honey.
Protein powder – Chocolate protein powder would also be delicious.
Chocolate chips – Milk, dark, white, or dairy-free chocolate are all great choices for this recipe.
Tips
Take care to use enough parchment paper to line the baking dish. Having an overhang helps to lift the banana oat protein bars out of the pan when you are ready to slice them.
Banana Oat Protein Bars
Hearty protein bars with sweetness from bananas and chocolate chips for a treat.
Servings: 16 bars
Ingredients
- 2 medium overripe bananas about 1 ½ cups
- ½ cup natural unsweetened, unsalted peanut butter or a mix of nut butters
- ½ cup maple syrup
- ½ teaspoon vanilla extract
- 2 cups rolled oats
- ⅔ cup vanilla whey protein or protein of choice
- ½ cup chocolate chips
- ¼ cup chopped nuts
- ¼ teaspoon salt omit if your nut butters have salt
Instructions
- Preheat oven to 350°F. Line a 9×9 inch baking pan with parchment paper.
- Place bananas in a large mixing bowl and use a fork to thoroughly mash. Stir in peanut butter, maple syrup, and vanilla extract. Add rolled oats, protein powder, chocolate chips, nuts, and salt. Stir well to combine.
- Pour mixture into the baking dish and spread in an even layer. Bake for 23-25 minutes until set.
- Remove from oven and let cool in the pan for about 30 minutes. Use the parchment paper to lift the bars out of the pan and let cool completely on a wire rack until cutting.
- Once fully cooled, cut into 16 squares.
Notes
Store in an airtight container at room temperature for up to 2 days and in the refrigerator for up to one week.
