Banana Oat Protein Bars

Hearty protein bars with sweetness from bananas and chocolate chips for a treat.

Ingredients

  • 2 medium overripe bananas about 1 ½ cups
  • ½ cup natural unsweetened, unsalted peanut butter or a mix of nut butters
  • ½ cup maple syrup
  • ½ teaspoon vanilla extract
  • 2 cups rolled oats
  • cup vanilla whey protein or protein of choice
  • ½ cup chocolate chips
  • ¼ cup chopped nuts
  • ¼ teaspoon salt omit if your nut butters have salt

Instructions

  • Preheat oven to 350°F. Line a 9x9 inch baking pan with parchment paper.
  • Place bananas in a large mixing bowl and use a fork to thoroughly mash. Stir in peanut butter, maple syrup, and vanilla extract. Add rolled oats, protein powder, chocolate chips, nuts, and salt. Stir well to combine.
  • Pour mixture into the baking dish and spread in an even layer. Bake for 23-25 minutes until set.
  • Remove from oven and let cool in the pan for about 30 minutes. Use the parchment paper to lift the bars out of the pan and let cool completely on a wire rack until cutting.
  • Once fully cooled, cut into 16 squares.

Notes

Store in an airtight container at room temperature for up to 2 days and in the refrigerator for up to one week.
