Ingredients
2medium overripe bananasabout 1 ½ cups
½cupnatural unsweetened, unsalted peanut butteror a mix of nut butters
½cupmaple syrup
½teaspoonvanilla extract
2cupsrolled oats
⅔cupvanilla whey proteinor protein of choice
½cupchocolate chips
¼cupchopped nuts
¼teaspoon saltomit if your nut butters have salt
Instructions
Preheat oven to 350°F. Line a 9x9 inch baking pan with parchment paper.
Place bananas in a large mixing bowl and use a fork to thoroughly mash. Stir in peanut butter, maple syrup, and vanilla extract. Add rolled oats, protein powder, chocolate chips, nuts, and salt. Stir well to combine.
Pour mixture into the baking dish and spread in an even layer. Bake for 23-25 minutes until set.
Remove from oven and let cool in the pan for about 30 minutes. Use the parchment paper to lift the bars out of the pan and let cool completely on a wire rack until cutting.
Once fully cooled, cut into 16 squares.

Store in an airtight container at room temperature for up to 2 days and in the refrigerator for up to one week.
