A no frills, deliciously easy fresh plum cake that works for a breakfast side, afternoon treat, or dessert. This cake is made with chopped fresh plums that give it a subtle taste and sweetness.

Variations

Fruit – I used fresh plums, but this recipe would also be great with fresh peaches or berries.
Raw sugar – Using brown sugar or completely omitting the sprinkled sugar on top are great options.

Simple Fresh Plum Cake

An easy fresh plum loaf that delivers subtle flavor and sweetness.

Ingredients

  • 1 cup pitted fresh plums chopped
  • 1 tablespoon flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1½ cups all purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ⅓ cup sour cream or plain yogurt
  • ¼ cup raw sugar for sprinkling

Instructions

  • Preheat the oven to 350 degrees. Spray a 9×5 loaf pan with cooking spray or line with parchment paper.
  • Sprinkle chopped plums with flour, toss to coat, and set aside.
  • In a large bowl with an electric mixer, beat sugar, butter, and vanilla until light and fluffy. Beat in the eggs one at a time.
  • In a medium bowl, sift the flour, salt, and baking soda.
  • Alternate mixing the dry ingredients and sour cream into the wet mixture until it is smooth. Fold in plums and pour the batter into the prepared loaf pan. The batter will be thick. Spread evenly with a spatula and sprinkle the raw sugar on top.
  • Bake for 45-50 minutes until a toothpick inserted into the center of the loaf comes out cleanly. Remove from the oven and let cool in the pan for 15 minutes before removing to cool on a wire rack.

Notes

This loaf freezes well and can be kept in the freezer for up to 3 months. Defrost in the refrigerator or on the countertop.
