Ingredients
1cuppitted fresh plumschopped
1tablespoonflour
¾cupgranulated sugar
½cupunsalted buttersoftened
1teaspoonvanilla
2largeeggs
1½cupsall purpose flour
½teaspoonsalt
¼teaspoonbaking soda
⅓cupsour cream or plain yogurt
¼cupraw sugarfor sprinkling
Instructions
Preheat the oven to 350 degrees. Spray a 9x5 loaf pan with cooking spray or line with parchment paper.
Sprinkle chopped plums with flour, toss to coat, and set aside.
In a large bowl with an electric mixer, beat sugar, butter, and vanilla until light and fluffy. Beat in the eggs one at a time.
In a medium bowl, sift the flour, salt, and baking soda.
Alternate mixing the dry ingredients and sour cream into the wet mixture until it is smooth. Fold in plums and pour the batter into the prepared loaf pan. The batter will be thick. Spread evenly with a spatula and sprinkle the raw sugar on top.
Bake for 45-50 minutes until a toothpick inserted into the center of the loaf comes out cleanly. Remove from the oven and let cool in the pan for 15 minutes before removing to cool on a wire rack.
Notes
This loaf freezes well and can be kept in the freezer for up to 3 months. Defrost in the refrigerator or on the countertop.
