Cold Turkey and Vegetable Wrap

Serve with

Chips – The perfect companion to a wrap or sandwich. We recently tried ‘Ulu Mana chips and highly recommend them.
Fruit – For another serving of freshness.

Substitutions

Protein – The turkey can be replaced with honey ham or sliced chicken breast, or omit meat entirely and add extra cheese for a vegetarian option.
Dressing – Swap for your favorite dressing, or mustard and mayonnaise.
Bell Pepper – Cucumber is a great replacement for bell pepper to keep a bit of crunch.

Variations

The nice thing about wraps is how flexible they are!  Try a Caesar wrap by using Caesar dressing instead of honey mustard, and shredded parmesan instead of sliced cheddar.  Add some spice by sprinkling on red pepper flakes, or up the nutritional value even more by adding some fresh spinach leaves.

Storage + Tips

Store wrapped in plastic wrap in the fridge or in an airtight container for 2-3 days.

Cold Turkey and Veggie Wrap

A quick and simple wrap using deli meats, fresh veggies, and cheese.

Equipment

  • cutting board
  • knife
  • plastic wrap

Ingredients

  • 4 whole wheat tortillas, 10-inch
  • 1 16 ounce deli sliced turkey
  • 8 slices cheddar cheese
  • 1 head romaine lettuce washed and separated
  • 1 bellpepper sliced
  • 1 tomato sliced
  • 1 avocado sliced
  • honey mustard dressing
  • salt and pepper to taste

Instructions

  • Wash produce and slice. Set aside.
  • Lay a tortilla flat on a cutting board or plate. Fill tortilla with 2 slices of cheese, 3-4 slices of turkey, and a quarter of the remaining prepared vegetables.  Drizzle with honey mustard dressing, and season with salt and pepper to taste. 
  • Roll the wrap by folding one side over the filling and gently pulling the ingredients toward the fold.  Roll towards the open end until completely closed.
  • Repeat steps 2 and 3 with the remaining tortillas.
  • Slice the wrap down the center and serve immediately, or wrap tightly with plastic wrap and store in the refrigerator for up to three days.
