Instructions
Preheat oven to 425°F. Line a large baking sheet with parchment paper.
Cut ham and cheese slices into quarters. These pieces should be about 2-inches in length and width.
Unroll pie crusts. Cut each crust into 12 pumpkin shapes using your cookie cutter. You will have 24 pumpkin shapes total.
Place 12 of the pumpkin shapes onto your prepared baking sheet.
Cut the remaining 12 with either a Jack-o-lantern or Pumpkin design.
For the Jack-o-lantern: Using a sharp knife, cut out triangular shapes for the eyes and mouth.
For the pumpkin: Using a sharp knife, cut 3 thin vertical slivers.
Place 2 slices of cheddar in the center of each of the 12 pumpkins on the baking sheet. Then top with 2 slices of ham.
With a small pastry brush, brush egg around the edges.
Top with the 12 remaining pumpkins with cut-outs and press down edges to seal.
Brush tops with beaten egg. Bake for 12-14 minutes until golden. Let cool on baking sheet for 5 minutes before serving.
