An easy and delicious melon ice cream bar with only 3 ingredients! It blends in under 5 minutes and takes a few hours to fully freeze. Korean melon ice cream bars are one of my favorite frozen treats and this recipe is a near copycat to make at home.

Variations + Tips
Melon – I used Hami melon for this recipe. Honeydew or cantaloupe are also great and I would love to try it with watermelon.
Milk – For peak creaminess, I used heavy whipping cream. Coconut milk would be a good non-dairy alternative, but will alter the texture and flavor.
Popsicle molds – I use silicon popsicle molds that can be found online. They are easy to use and clean.
