Look no further for the perfect light meal or appetizer!  With just a few ingredients you’ll create the star of the table with this Heirloom Caprese Salad.

Tis’ the season for bold and beautiful Heirlooms!  (or soon to be coming up!) If you’ve never tried one, this is the perfect recipe to familiarize yourself with this variety of tomato.  Paired with mozzarella, basil, and a simple balsamic dressing, this salad comes together in minutes to make the transition from summer to fall a flavorful one.

Substitutions

Substitute the Heirlooms with any medium to large tomato variety, like hothouse or on the vine.

Storage + Tips

Refrigerate in an airtight container for 1-2 days.

Heirlooms range in size from small to pretty large – I recommend a medium size that’s close to or slightly larger than the size of the cheese when sliced. I also find the texture to be nicer if the tomato isn’t overly soft. If you are eating this as a light meal, this recipe is 2-3 servings.

Simple Heirloom Caprese Salad

Equipment

  • cutting board
  • knife
  • serving plate

Ingredients

  • 2 medium heirloom tomatoes rinsed
  • 8 ounces fresh mozzarella cheese log or ball
  • fresh basil leaves rinsed and dried

Dressing

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • pinch of salt and pepper

Instructions

  • Remove stem and any hard core from the tomatoes. Slice into eight equal sized rounds, between a quarter to half inch in thickness. Remove mozzarella from packaging and slice into six to eight rounds of equal thickness.
  • Lay down one tomato slice, then place a slice of mozzarella on top slightly off to the side. Continue layering the tomato and mozzarella slices until they are all on your serving plate.
  • Spread basil leaves across the top of the tomato and mozzarella.
  • Mix dressing ingredients together in a small bowl and drizzle over the top to taste. Serve immediately.
