Located off of South Jackson street in Seattle, Wood Shop BBQ is a bit of Kansas and Texas BBQ all founded in Seattle. To smoke their meats, they source their Hickory wood from the Ozark mountains and Post Oak from Texas.
Their menu boasts all of the classic BBQ fare such as brisket, ribs, and pulled pork. They also serve up great side dishes and their jalapeno mac and cheese bowls.
Ume
We ordered the beef brisket, pork ribs, smoked chicken mac and cheese, portabello Manchaca mac and cheese, and a side of potato salad. I knew I would be focused on the pork ribs and the mac and cheese dishes since I don’t typically enjoy beef and I was not disappointed.
The pork ribs were smoky, fall off the bone tender, and topped with a great spice rub blend. I thought they were tasty with and without the house made BBQ sauce.
The portabello Manchaca was rich, creamy, and downright delicious. The mac and cheese has all of the jalapeno flavor without much heat so one could eat the entire portion without suffering from spiciness. The earthiness of the mushrooms with the cheese and added pickles on top to cut the richness created a star dish.

The winners for me were the ribs and portobello mushroom mac ‘n cheese. Add a dash of ghost pepper (or regular) BBQ sauce to cut the richness of the mac ‘n cheese and you’re left with one of the most satisfying comfort foods. The ribs didn’t need sauce at all – the meat just fell off the bone and the wood-smoked flavor was perfect without any additions.

I really enjoyed the ribs! So tender and flavorful. If you get their bread or have rolls at home, I recommend making a little sandwich with the meat and BBQ sauce. The portobello mac and cheese was really something special. So savory and flavorful in a way that I didn’t expect. I also tried their chicken mac and cheese, I’d say that the portobello mac has the edge between the two! Their potato salad was also very good. Wood Shop is worth a try and I’ll definitely be going back!
