Sea Wolf Bakery

Sea Wolf is a bakery in the Fremont area that specializes in bread and pastry, using grain from the Pacific Northwest thoughtfully in their offerings.

Opened in 2014 by Brothers Jesse and Kit Schumann, Sea Wolf was originally a wholesale – only business, providing their sourdough loaves to local restaurants. In 2016, they moved to the current location on Stone Way North, and opened up to the public. Free street parking is available in the area, and if you are visiting by bike you can access the shop from the Burke Gilman Trail.

I learned about Sea Wolf through one of my favorite Seattle restaurants, How to Cook a Wolf.  Sea Wolf Sourdough with fennel-honey butter, confit garlic, and balsamic.  I get it every time I go there and it’s the best sourdough (and a favorite of any bread type) I’ve ever had.  It became a mission of mine to visit the bakery and get a full loaf, and that’s exactly what I did. 

The shop is in a very walkable location, and ordering at the counter is straightforward and streamlined.  I got a white sourdough loaf, a savory croissant, and a chocolate chip cookie.  Everything was delicious, and the sourdough still holds the award for the best in my book.  The crust is perfectly crusty and chewy.  The inside is wonderfully soft and airy.  It stands strong on its own, and makes pretty much anything you put on it or dip it in that much better. 

Do yourself a favor – pick up a loaf, make some stew, and get to dunking!    


Ume

I’m always interested in trying a bakery so a trip to Sea Wolf was an easy yes. We tried the white sourdough, a chocolate croissant, and a savory croissant.

The croissants were solid; flaky with superb layers from lamination. The chocolate croissant was delightful as a breakfast item with coffee.

The sourdough loaf is the standout item. The outside is crispy and crusty and the inside is amazingly soft. It has the perfect sourdough tang and we demolished the loaf within a day (I should have bought 3 loaves). Our favorite way of eating it, aside from just by itself, was a grilled cheese. Two slices with Flagship Beecher’s cheese was one of the best grilled cheese sandwiches we’ve ever had.
