Paper Cake Shop brings elevated layered cakes from Seattle Chef Rachel Yang of Joule and Revel and Pastry Chef Gabby Park. Located on Stone Way in Fremont, the aesthetically neat shop offers cake by the slice with indoor seating to enjoy your purchase solo or with company.
Takeaway is an option, and patrons can order full 6×8 cakes and their special Jewel Box (one slice of each of the available six cakes) online.
Mysa
I tried the following flavors: Black Pink (vanilla cake, quince, black sesame Oreo buttercream, guava gelee), Keel Bill (lemon cake, blackberry jam, lychee gel, raspberry buttercream, Froot Loops), and Mango Royal (coconut cake, lime mango compote, graham cracker buttercream, coconut buttercream mango gelee).
Each slice was very different from the others, and the standout for me was the Mango Royal. The punch of mango mixed with coconut and creamy graham cracker buttercream was melt in my mouth delicious, and for me the most balanced mix of all the slices I tried. Keel Bill was my second favorite with its tart and fruit flavors. The Black Pink slice was a bit overwhelmed by the black sesame Oreo buttercream, but if you like sesame as much as I do it’s still quite good!
Overall I thought the slices were really fun to try and will be keeping an eye out for new flavors.
Ume
We ate the Black Pink, Big Bang, and Keel Bill cakes. Each piece was impeccably cut and decorated like mini pieces of art. They all had very distinctive tastes and I would say the Asian ingredients like the black sesame (Black Pink) and red miso (Big Bang) were at the forefront.
My favorite was easily the Keel Bill with the lemon cake harmonizing with the blackberry and raspberry buttercream. The flavor was reminiscent of the fruity cereal that tops the cake and added a whimsy appeal which my kids loved.
Paper Cake occasionally rotates flavors and I look forward to trying more.
Momo
I love the asian flavors featured in each cake and the way they’re each a small piece of art. We tried the Cardi P (Coconut cake, yuja marmalade, cardamom pistachio buttercream, completely gluten free) and the Big Bang (Chocolate cake, tahini layer, red Miso caramel, milk chocolate buttercream, sesame brittle).
My favorite was the Cardi P for the pistachio buttercream and yuzu flavor (I have been in a perpetual yuzu phase). The coconut cake was surprisingly moist and I wouldn’t have guessed it was gluten free if I hadn’t known!
The Big Bang was a unique take on salted caramel chocolate cake. I enjoyed the savory notes from the tahini and red miso caramel. However, if you’re looking for a classic chocolate cake it might not satisfy your craving (my partner did not enjoy the twist on flavor).
Overall I would definitely go back to try more flavors and look forward to new ones on rotation (an Ube Mocha cake was just added)!
