Zio Sal Ristorante Italiano

Zio Sal is located on the edge of Redmond Town Center, an active and walkable shopping center with a variety of shops and eateries.  Though off the main center path, this Italian bar and restaurant draws people in with delicious food and the reminiscent feel of a Florence eatery.  We went right at opening and had our choice of being seated indoors or outside on the large patio.

We tried two pastas: the Spaghetti Carbonara and Ravioli Aurora.  The carbonara was peppery, eggy, creamy perfection.  A classic Italian dish, the pasta was warm and fresh with crispy Italian bacon and lots of cheese.

The Focaccia bread was well-toasted and was served with a sweet, thick vinegar and light olive oil.  It was a delicious side to the softer cheesy pasta dishes.
